I would say it's personal preference. It depends on what fish you fish for, the location you're in etc.

Personally I tend to jig like I do IRL. Depending on the species it might be a straight slow with a spinstop here and there, or it might be a 3speed stop and go. It all comes down to your personal experience in the end. You'll use whatever have worked for you in the passed for that location/species/softbait.

 

My suggestion would be to check out some clips on youtube. (And not only from the game, check out some "pro angler" videos that shows you tips on how to fish different kinds of softbaits.)

I feel like the responses posted thus far are solid so I won't add too much. I find a lot of success with shads using a slow stop and go (speed depends on jig weight), or a slow lift and drop. The main focus is to maximize the amount of time the lure spends at the target depth. Usually that depth is as deep as possible without directly dragging the lure across the bed. But TBH... I've managed to catch walleye via dragging since the night fishing update.
